Pasta with homemade tomato sauce

Ingredients for 4 servings:

  • 2 kg tomatoes, fresh, ripe
  • 500g spaghetti
  • 3 m.-sized onion(s)
  • 1 ring/s of meat sausage or hunting sausage
  • Tomato paste or tomato ketchup
  • salt and pepper
  • e.g. basil
  • some oil for frying
  • Paprika powder
  • some sauce thickener as needed

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash the tomatoes and peel the onions. Quarter both and place them in a large pot. Add a little water and then simmer for about 45 minutes, stirring occasionally. In the meantime, cut the meat or hunting sausage into small pieces and fry in a pan until browned. Then drain on kitchen paper (this will make them slightly crispy!). Strain the tomato and onion mixture through a sieve. Pour the liquid and the resulting puree into a pot. Meanwhile, bring the pasta water to a boil and cook the pasta. Bring the tomato sauce to a boil and thicken with a little sauce thickener. Then remove from the heat and season with salt, pepper, tomato paste or tomato ketchup, and paprika. Add basil, if desired. Drain the pasta. Serve on plates with the sauce and scatter the fried sausage on top. Serve with grated cheese.
