Stew with potatoes, carrots and sausage for the extended family

Ingredients for 8 servings:

  • 1 kg potatoes, diced
  • 1 kg carrot(s), sliced
  • 3 medium-sized onions, diced
  • 3 stalk(s) leeks, sliced
  • 2 Cabanossi , cut into small pieces or slices
  • n. B. Belly bacon
  • 1 can white beans
  • 1 can of lentils
  • 1 piece(s) celery, diced
  • 1 bunch of parsley
  • 2 tsp pepper
  • 2 tsp salt
  • 2 liters of vegetable broth
  • 2 tbsp oil
  • 1 pinch of nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Dice the onion and chop the Cabanossi into small pieces. Brown both in a large pot with a little oil. Add the vegetable stock and simmer over low heat. Next, add the carrots, diced potatoes, celery, and bacon. You can leave the bacon whole, but I prefer to cut it into strips. Chop the leek and add it along with the white beans and lentils. Simmer everything over low heat and finally add the chopped parsley. Season to taste with salt, pepper, and a touch of nutmeg.
