Tortellini salad with yogurt dressing

Ingredients for 4 servings:

  • 800 g tortellini with tomato and mozzarella filling
  • ½ cucumber(s), peeled
  • 1 small can of corn
  • 200 g ham
  • 200 g natural yogurt
  • ½ pack of herbs, frozen
  • salt and pepper
  • 1 tsp mustard
  • 1 tsp remoulade
  • ½ tsp lemon juice
  • 1 tsp sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 25 minutes

Cook the tortellini according to the package instructions. Meanwhile, dice the cucumber and ham. Add the corn. Mix the yogurt with the mustard, remoulade, lemon juice, sugar, and herbs. Season with salt and pepper. Mix the dressing with the ingredients in the bowl. Drain the tortellini and let cool. Add the cooled tortellini to the bowl and stir well. I always let the salad stand for 2 hours to marinate, but you can also eat it immediately.
